I’m not one for a stiff drink, so when I’m presented with rum, I want all things combined into one glass. The thought of rum immediately has me craving pairings of fresh fruit purée in a fun glass with an umbrella and a flower on top – added points if I’m sipping it outside under a large umbrella in the sunshine.

With Valentine’s Day on the horizon, I wanted to craft up a sweet yet sensual concoction that felt bright and fun through its flavor profile. I decided to incorporate one of my favorite tropical fruits – passionfruit – along with Mai Tai-inspired flavors for a mix that would blend seamlessly with rum. Upon doing a bit of research, I found out that pomegranates are a natural aphrodisiac, which I knew I had to add into my now-forming “Passion Potion”. To make the drink pink, a splash of grenadine sounded just right. I was gifted a bottle of Trader Vic’s Mai Tai mix, and to my surprise – a bottle of Trader Vic’s Grenadine Pomegranate Syrup, which was perfect for the recipe that I was already drafting up on paper.

“In 1944, Trader Vic pulled down a bottle of 17-year-old Jamaican rum, added a squeeze of lime, a dash of rock candy syrup, a splash of orange curaçao, and some French orgeat, and poured the concoction over cracked ice. He handed it to a friend visiting from Tahiti, who immediately exclaimed, “It’s mai tai roa ae!” (Tahitian for “Out of this world – the best”), and the first Mai Tai was born – paradise in a glass.”

Passion Potion Cocktail (featuring Trader Vic’s)

Ingredients

  • 2 oz Dark Rum
  • 3 oz Trader Vic's Mai Tai Mix
  • 1/4 oz Trader Vic's Grenadine Pomegranate Syrup
  • 1 oz Coconut Cream (from the top of a can of coconut milk)
  • 2 oz Passion Fruit Purée
  • 1 oz Toasted Coconut Syrup
  • 1/4 cup Frozen Pineapple
  • 1 Lime (juiced)
  • Ice (small handful, approx. 3 ice cubes)
  • Coconut Whipped Cream (for topping)
  • Pomegranate Seeds (for topping)

Instructions

  • Combine ingredients in a blender. Blend for 10-15 seconds.
  • Pour into your favorite glass and garnish with coconut whipped cream and pomegranate seeds.
