For Homemade Pesto
1cupBasil
1/4cupSunflower Seedsor Pine Nuts
3clovesGarlic
1/3cupOlive Oil
1/3cupParmesan CheeseI used vegan parmesan
1/2tspDiamond Crystal Kosher Salt
1/4tspBlack Pepper
3tbspSherry Vinegaror juice from 1/2 lemon
Instructions
If making homemade pesto, combine all ingredients into a high-speed blender and combine until smooth. Adjust taste as necessary by adding salt, lemon, or basil. Set aside.
Slice strawberries in quarters and arrange on a large serving platter.
Gently break apart the burrata, careful to keep the filling in tact as much as possible. Arrange on large serving platter among strawberries.
Break apart the fresh basil and sprinkle over top of strawberries and burrata.
Drizzle olive oil on top of strawberries, burrata, and basil. Then, drizzle pesto and sprinkle with a pinch of fleur de sel, if desired, before serving.
