Everything Butter Grilled Shrimp

Equipment

  • Large Stainless Steel Skewers

Ingredients

  • 2 lbs Raw Shrimp peeled and deveined
  • 1/2 cup Challenge Butter Everything Flavor Seasoned Snack Spread
  • 3 tbsp Fresh Chives
  • 4 cloves Garlic
  • Pinch of Kosher Salt
  • Pinch of Black Pepper
  • 2 tbsp Vegan Mayonnaise
  • 2 tbsp Dijon Mustard

Instructions

  • Peel and devein shrimp, then rinse and pat dry. Set aside.
  • Finely chop chives and garlic, then add to a a small saucepan over low heat with Seasoned Snack Spread, salt, and pepper.
  • Stir gently until butter has melted and ingredients are well-combined.
  • Add butter mixture to shrimp and let sit for 5-10 minutes while you heat up your grill to 350 degrees.
  • Place shrimp on stainless steel skewers, sliding center of shrimp through the skewer and spacing them out evenly.
  • Grill shrimp until opaque; approximately 2-3 minutes per side. Be careful not to overcook or the shrimp will be chewy.
  • Remove from grill and brush one more layer of seasoned garlic butter over top before serving.
  • To make aioli, add mayonnaise and dijon mustard to a bowl with the leftover seasoned garlic butter. Whisk to combine.
